At my work me and the girls do “crock pot Wednesdays” where each of
us takes a turn making a crock pot meal for dinner which all of us enjoy
. There was one in particular than i liked so much I’ve made several
times since, really good and really easy. (so easy even my boyfriend can
make it)
ingredients
3 boneless skinless chicken breast
2 packets of taco seasoning (i use the less sodium)
1 can of salsa
1 can of black beans (strained)
juice from 1 lime

place all ingredients in the crock pot, feel free to add 1/4-1/2 cup
of water if the chicken isn’t fully covered. cooked on high for about 4
hours or until the chicken is no longer pink. take chicken out and using
two forks pull apart the chicken (so it looks shredded) and put it back
in the crock pot, turn to low and let it sit for about 30 minutes.
scoop out the chicken onto a taco shell (i use soft taco shells) and
top to your liking, tomatoes, lettuce, cheese, sour cream, etc.
